Breakfast Is Served: UNLV Athletics Partners With College Of Hospitality To Create Training Table For Student-Athletes

LAS VEGAS (UNLVRebels.com) - UNLV student-athletes returning to campus for the new semester are now able to take advantage of a full training-table option at the Fertitta Football Complex thanks to a unique partnership between the Athletics Department and the university's world-renowned William F. Harrah College of Hospitality.

The newly created Rebel Training Table inside the Gaughan Family Dining room at the recently opened $34.8 million training center will serve all of UNLV's 17 varsity programs. UNLV's 515 student-athletes can now take advantage of a full breakfast buffet served from 6:30-11:30 a.m. Monday through Thursday during the school year.



UNLV Director of Athletics Desiree Reed-Francois worked with Harrah College's Dean Stowe Shoemaker to make it a reality.

"Dean Shoemaker has been a terrific campus partner," said Reed-Francois. "The efforts of our friends at the College of Hospitality and our own department staff have provided us with yet another way to elevate performance in every area of our student-athletes' lives. Thank you to Mallory Poole, Marcus Bowman, Eric Nepomuceno, Nicole Kiley, Sarah Wattenberg and the many others who were involved. We are all thrilled at the impact that this new initiative will have on all Rebels."




Under the leadership of Executive Chef Mark Sandovol, the College of Hospitality has brought aboard Marc Ty to run the daily operations of the Rebel Training Table. Ty, who is a member of the American Culinary Federation's Olympic Culinary Team, will work closely with UNLV Athletics' registered dietitian, Nicole Kiley, to create a weekly menu that includes an action station and rotation of performance-based foods.

"Partnering with UNLV Athletics offers a unique opportunity for our College to expand the footprint of our robust catering services," said Shoemaker. "It opens opportunities for our students to gain practical experience in a first-class kitchen while also helping the Rebels succeed."

The Rebel Training Table will also serve as a host site for auxiliary life-skill and career development initiatives such as cooking demonstrations and etiquette events offered to student-athletes.

"High-level performance requires consistent and targeted nutrition intake," said Kiley. "Starting the day with a wholesome, nutrient-dense breakfast will fuel early-morning training and enhance recovery. This is a major step in our initiative to enhance holistic services while also building community."
